Meal Program

The children at our center have the opportunity to be on our meal program for an additional $5.00 per day.  Everyday our little ones on the meal program are provided two snacks and a hot lunch cooked by Mrs. Monika. Our menus provide a wide variety of entrees and include fresh fruits and vegetables, such as blueberries, strawberries, cucumbers, broccoli, cauliflower, and much more.  Snacks include bagels, granola, yogurt, and homemade muffins.  Mrs. Monika incorporates foods from our school gardens as much as she can!  The little ones have had squash, beets, peas, lettuce, spinach, and herbs added to the school meals.  We have a food tasting program, in which the children are getting to try new, unique foods.  Check out our programs page to see what food they are currently trying!  Our menus have been reviewed by a registered dietitian to assure that USDA nutrition guidelines are followed.  We also follow the CACFP food guidelines at our center.


Meet Mrs. Monika

Mrs. Monika is our wonderful cook who serves our little ones delicious, nutritious food every single day!  She grew up in the southern part of Poland in a little village called Trzebunia.  As the second of five children, it was her "weekend chore" to help cook.  During this time, Poland was ruled by the communist party, which meant that rations and coupons were distributed to buy food.  This is when Monika developed the passion and need for taking care of people.  This is what brings her great joy!  She loves the kids: daily interaction, as well as knowing and seeing them outside of school!  We are very lucky to have a great cook who is passionate about cooking and caring for our little ones at Summit County Preschool!

Recipe of the Week:

Tuscan Bean Soup


  • 3 tbsp extra virgin olive oil

  • 1 onion, roughly chopped

  • 2 leeks, roughly chopped

  • 1 large potato, peeled and diced

  • 2 garlic cloves, finely chopped

  • 5 cups vegetable stock

  • 14 oz can cannellini beans, drained, liquid reserved

  • 6 oz savoy cabbage, shredded

  • 3 tbsp chopped flat leaf parsley

  • 2 tbsp chopped fresh oregano

  • 1 cup parmesan cheese 

  • salt and freshly ground black pepper


  1. Heat the oil in a large saucepan and gently cook the onion, leeks, potato and garlic for 4-5 minutes

  2. Pour the stock and the reserved liquid from the beans into the saucepan.  Cover with a lid and allow to simmer for 15 minutes.

  3. Stir in the cabbage and beans, and half the herbs.  Season, & cook for 10 minutes more.  Spoon about 1/3 of the soup into a food processor or blender & process until fairly smooth.  Return to the soup in the pan, taste for seasoning & heat through for 5 min.
